What Are Microgreens?

Microgreens are very young versions of your favorite leafy greens and vegetables. They are usually harvested 7-24 days after germination, right after the plant's first leaves (cotyledon leaves) emerge. 

We like to think of them as a living multivitamin. Microgreens contain up to 40x more beneficial nutrients than their full-grown counterparts. 

Microgreens are considered healthy because they are packed with nutrients such as vitamins, minerals, and antioxidants. They also contain high levels of enzymes, which can aid in digestion and support overall health. In addition, microgreens are low in calories and high in fiber, making them a great addition to a healthy diet.
